First things first, I take no credit for this beaut of a recipe, it’s pilfered from the babes at Boom & Bird – check out their blog, it’s awesome!
I decided to try making this recently and was totally blown away by how quick and easy it was, but still looked super impressive.
As usual with coconut oil “chocolate”, it has that beautiful buttery texture when you bite into it, combined with salty crunchy pistachios and sour cranberries, it’s a winner.
You will need:
- 1.5 cup Raw Cacao Powder
- 1 Cup of melted Coconut Oil
- 2 Tablespoons honey or vegan alternative ( I suggest using more than this if you don’t like bitterness)
- Pinch of sea salt
- Chopped nuts & Dried Fruit (our favs are pistachio and dried cranberries)
Line any old baking tray with some baking parchment. In a bowl, mix the melted coconut oil with the cacao powder, honey and salt, and stir until it’s a lovely glossy consistency.
Then just pour onto the baking tray, sprinkle with your fruit and nuts, and pop in the fridge for at least half an hour to let it set. It literally takes 2 minutes!
You can break a little piece off each day for a clean treat, or even wrap it prettily and give it as a gift!
